So here comes my first blog post! Sharing the recipe of this quick and easy, yet so delicious Chicken and Vegetable stir-fry. Made this couple of weeks ago and I loved it. This recipe is perfect for those who want to eat something healthy. i served it with white rice, but you can always serve it with brown rice, noodles, or have it on its own. 🙂 The recipe is as follows:
Prep time: 20 minutes
Cooking time: 10-15 minutes
Serves: 2-3 people
- Chicken – 500 grams
- Corn flour – 1 tablespoon plus 1 tsp mixed with water
- Garlic – 2 cloves chopped
- Broccoli – 2 cups, cut into bite sized chunks
- Zucchini – 2 medium sized, cut into cubes
- Carrot – 1 medium sized, cut into cubes
- Baby corn – half tin, sliced
- Mushrooms – half tin, sliced
- Capsicum – 1 small
- Parsley – for garnish
- Olive oil – 2 tablespoon
- Oyster Sauce – 3 tablespoon
- Soy Sauce – 2 tablespoon
- Green Chili Sauce – 3 tablespoon
- Black Pepper Sauce – 3 tablespoon
- Black Pepper
Cut the chicken into thin slices mix in the corn flour, 1 tbsp of Soy Sauce and let it sit for 10 mins.
In a wok heat the olive oil, add the chopped Garlic cloves and stir fry for a minute. Add in the chicken and on high heat let it cook. When the chicken turns white, add in the remaining Soy Sauce, Oyster sauce, Green chili sauce, black pepper sauce, salt, black pepper, and carrots. add in water if you desire more gravy. Cook it for a couple of minutes, if you want to thicken the gravy you can add corn flour mixed with water. Lastly add the remaining vegetables and cook for not more than a minute, otherwise the vegetables will become soft.
Mix it well and serve it with rice or noodles. Garnish it with parsley and enjoy your meal. 😀
Please note that I cut the chicken into thin slices so that it cooks quickly.
