Greek lemon chicken has to be the best baked chicken that I have ever had. We have it almost every week, because it is so easy to prep and so so delicious!
You can make this for any special occasion, for your guests, or on a lazy day when you just want to relax and not stand in front of the stove mixing and stirring the food.
I usually serve it with broccoli and zuccini salad. I will share its recipe too, soon.
The recipe for Greek Lemon Chicken is as follows:
Serves – 2-3
Prep time – 10 mins
Cooking time – 50 mins
- Chicken – 1kg thigh and leg pieces with skin
- Potaotes – 3 medium sized, peeled and cut into halves
- Olive oil – 1/3 of a cup
- Lemon juice – of 5 6 lemons
- Dried Oregano – 1 tsp
- Dried basil – 1 tsp
- Red chilli powder – 1 tsp
- Salt – as per your taste
- Flour – 1 tsp
Pre heat the oven to 200 degrees C.
In a bowl mix the chicken and potaotes with olive oil, lemon juice, dried oregano, dried basil, salt, and red chili powder. Mix it well.
In a baking dish, place the chicken pieces skin side up, and the potatoes. Pour the marinade on top and put the dish in the oven for 45 mins.
Half way through the baking time baste the chicken pieces with the marinade. For the final 5 minutes of baking, broil the chicken so that the chicken skin turns brown and crisp.
Once done, plate the chicken pieces. Pour the juices from the baking tray in a pan and add 1 tsp flour, and cook till the gravy thickens up.
