Green Salad with Grilled Chicken

I always used to think that salads are boring and bland. But when unhealthy eating habits results in extra kilos on your body, one has to make healthy choices to shed the weight.

So, I tried incorporating healthy meals in my diet, and I was pleasantly surprised how wrong I was about Salads being boring and bland. They are delicious and filling too.

I made this Green Salad with Grilled Chicken, with the ingredients that I alread had in my kitchen. I was surprised to see that with just a few ingredients how delicious it turned out to be.

Serves – 2

Prep time – 10 minutes

Cooking time – 15 minutes

Ingredients:

-For Grilled Chicken:

  • Chicken – 4 breast fillets
  • Soy sauce – 2 tbsp
  • Worcestershire sauce – 1 tbsp
  • Chili sauce – 1 tbsp
  • Black pepper – 1/2 tsp
  • Juice of 1 lemon
  • Olive oil – 2 tbsp

– For Green Salad

  • Iceberg lettuce – 1 whole
  • Zucchini – 2
  • Carrot – 1
  • Olives – as needed
  • Potato (optional) – 1 small boiled
  • Olive oil – 2 tbsp
  • Juice of 2 lemons
  • Oregano – 1/2 tsp
  • Dried Basil – 1/2 tsp
  • Salt – a pinch
  • Black pepper – 1/4 tsp

Method:

Marinate the chicken in all the ingredients, except olive oil. Set aside for fifteen minutes.

In a pan heat olive oil,  grill the chicken fillets till they are done. It will take around 4-5 minutes on each side for it to cook through. Baste the chicken with the marinade, while it is cooking.

Once done, remove from pan and let it rest for 3-4 minutes before using it in salad.

For the salad, tear up the Iceberg lettuce. Cut the zucchini, and carrots; and blanch them separately.

For the salad dressing, in olive oil, add lemon juice, oregano, dried basil, salt, and black pepper. Mix it well. In a bowl put all the vegetables, pour the salad dressing. Toss it well. Salad is ready.

Serve the grilled chicken on the bed of green salad, and enjoy this delicious meal. 🙂
