Prawns are my favorite seafood! I am not that fond of having fish, but i love love love prawns! I made these a couple of months ago, but i could not post this recipe then. But as they say better late than never.
So here is the recipe, it is fairly easy. The recipe for the Batter is taken from the famous celebrity chef Shireen Anwers recipe, as her recipes never go wrong, and i didn’t want to take any chances by experimenting 😀 The marination and the sauce was devised by me.
I hope you all try this, do let me know what you want Zainab to cook next 😀
For prawn marination:
- Prawns – 500 grams, de-veined, and shells removed
- Garlic paste – 2 tsp
- Salt – 1/2 tsp
- Black pepper – 1/2 tsp
For tempura batter:
- Plain flour – 1/2 cups
- Corn flour – 1/3 cups
- Oil – 3 tbsp
- Cold water – as needed to make a thick yet runny batter
- Salt – half tsp
- Baking powder – 1/4 tsp
For Dynamite sauce:
- Mayonnaise – 1/3 cups
- Cream – 1/3 cups
- Ketchup – 1/4 cups
- Hot sauce – 2 tbsp
- Paprika powder – pinch
- Salt – a pinch
- Garlic – 1 clove, crushed
- Oil – for deep frying
- Spring onions for garnish
Marinate the prawns with garlic, salt, and black pepper. set aside for 10 minutes, while you prepare the batter.
Meanwhile, heat the oil for deep frying in a wok.
Mix all the ingredients for the tempura batter to make a thick yet runny paste.
Dip the prawns in the batter and deep fry in medium hot oil. Please make sure you don’t overcook the prawns otherwise, they will become hard. I fried them for not more than 4 minutes, yes I used the stopwatch to monitor the time. 😀
For the dynamite sauce, mix all the ingredients. Add more hot sauce, if you prefer a spicier sauce.
Garnish with spring onions, and serve hot! 😀
